Shifting the Lens returns to the Bubble Room for another guest chef series that showcases people, cuisines and flavors that have historically been overlooked by traditional winery culinary and pairing programs.
Starting the series this year, Chef Tu David Phu brings a personal take on Vietnamese cuisine inspired by his own cultural and experiential journey, presenting a carefully curated five-course tasting menu paired with small-lot sparkling and still wines created by Winemaker Nicole Hitchcock.
During Shifting the Lens: Dinner & Dialogue, Chef Phu will join guests throughout their tasting to discuss the stories, narratives and philosophy behind each dish. He will then be joined in conversation by Winemaker Nicole Hitchcock and other winery leaders to discuss the current culture of the food and wine industries.
